Oikaisu: Ali Suviala: Gastropub kotikeittiössä

Väitin virheellisesti, että Ali Suvialan keittokirjassa Gastropub kotikeittiössä -kirjan esipuheessa oltaisiin käytetty virheellisesti termiä hollandaise-kastike. Kirjan sivulla 33 on kuitenkin mielenkiintoiselta vaikuttava hollandaise-muunnos. Pahoittelen virhettäni ja odotan kiinnostuneena kevään parsakautta.

I visited Paris briefly in the early October in order to attend the European Golang conference dotGo which was on Monday 10th of October, but I was able to leave on Friday. I had more than two days on my own in the Ville Lumiére. I was excited, but also a bit intimidated, because my French is limited to "pardon", "merci", "vin rouge" and some cuisine vocabulary. The icing on the cake is that my pronounciation is so horrible, that no-one understands me if I try to speak French. There was also a prejudice that the French don't want to speak English, even if they know it. My friends comforted me, that this is not the case, but I was a bit suspicious even after that.

The photographer in me was a bit nervous because France, though it's kind of home of photography and has produced such a fine photographers as Henri Cartier-Bresson, has a such a strict privacy laws. I had read things like the excellent piece by Oliver Laurent in the New York Times Protecting the Right to Photograph, or Not to Be Photographed.

So, I was excited and curious to see what Paris would be like.

I took a bus to the railway station of Malmi. Some people do not understand my choice of colour of my luggage. The reason is simple and practical: when there are dozens of pieces of luggage on the conveyor belt, it's really easy to spot mine.

The relatively new train connection to the airport proved to be effortless again. I wouldn't trust it in case of a blizzard, though. Then I would rather use a bus or a taxi.

I intended to eat my second breakfast at restaurant Fly Inn, but they were renovating, so I opted for O'Learys'. I enjoyed it, and the pint of beer and the robust meal would support me the long travel hours.

Extra battery by Brunton

My extra battery died just before the trip, so I had to buy a new one. This model is waterproof and shockproof, which nice, to put it mildly. Note to self, again: when you buy stuff, invest in quality. I've been quite happy with this one.

I had the rare comfort of sitting alone on my row. At the Paris Aéroport I bought a Paris Visite card which enables unlimited use of public transport including the trip from the airport to the city center. If on budget, consider the alternative ways to use the public transport of Paris, there are several alternatives. But the Paris visite is the easy way, and one also gets discounts on several museums.

The easiest way to go to the city is taking RER B train to Gare du Nord. You know, the place where Manne and Veera met in the Worthless. Gare du Nord is huge by Finnish standards and if I hadn't ever visited big cities like New York or Tōkyō I would have been at a loss. My prejudicies had started to dissolve into nothingness at the airport, and the process continued in the train. I had just started to comprehend the map in the train, when a French lady helped me by advising me how to get from Gare du Nord to Montmartre. She also tried to correct me on the pronounciaton of Mortmartre, but I'm afraid whe was not very successful on that. The importart thing was that I felt I was welcomed to the city.

Blanche

The first time I really saw Paris was when I climbed out of the Blanche metro station. I had thought I would like to see Moulin Rouge, but I did not expect to see it as the first thing in Paris. It took me a while to locate me, and how to find my hotel, Audran. I started to climb the butte of Montmartre and it seemed, to a foodie, like a candy store. The cheese stores, the bakeries and the charcuteries, it was kind of streetwise Hakaniemen halli.

Eventually I found the small alley called Rue Audran, and my hotel.

Gastropub kotikeittiössä

Tervetuliaisolut

Kirja-arvostelussa on asiavirhe, jonka olen oikaissut tekstissä Oikaisu: Ali Suviala: Gastropub kotikeittiössä. Sama lyhyesti: väitän tässä blogauksessa, että kirjan hollandaisekastike ei ole hollandaisekastike. Pahoittelen virhettä.

Sain kutsun ravintola Bryggerin keittiöpäällikön Ali Suvialan keittokirjan Gastropub kotikeittiössä julkaisutilaisuuteen. Rakastan ruokaa ja pidän oluesta, joten päivä meni uusiksi. Peruin yhden menon, mutta minulla oli samalle päivälle lippu Kansallisoopperan Lentävään hollantilaiseen, jonka voi sivumennen katsoa myös Yleltä.

Äijäruokaa suosittelee Wagnerin klassikkoa, mutta vielä enemmän suosittelen näkemään sen livenä: TV ei oikein tee oikeutta oopperalle. Julkaisutilaisuudessa vierailu jäi minulle valitettavan lyhyeksi.

Bryggeri on minulle ravintolana ja panimona suhteellisen tuntematon, mikä on hiukan noloa helsinkiläiselle ruoan ja oluen ystävälle. Muistan käyneeni ravintolassa vain kerran, kesäaikaan terassilla kuuntelemassa Willie, Waylon and Juniorin keikan. Bändi on aina hieno, ja olut ja ruoka oli hyvää. Muistikuvia pitänee tarkistaa ja täydentää.

Tilaisuuden alkudrinkkinä toimi hämmentävän kuohuviinimäinen Bryggeri Rosé, mielenkiintoinen, hyvin erilainen, olut. Ali Suviala ja panimomestari Mathias Hüffner pitivät lyhyet esitykset samalla, kun vieraille tuotiin alkuruoka ja siihen sopivaksi valikoitu olut.


Alkuruoka

Alkuruokana inkiväärimarinoitua lohta, riimihärkää ja sinihomejuustoa.

Alkuruokina pöytään tuli inkiväärimarinoitua lohta, riimihärkää ja sinihomejuustoa. Omaksi suosikikseni nousi lohi, vaikka myös riimihärkä ja juusto maistuivat. Sekä lohi että härkä päätyvät kotikeittiön TODO-listalle. Tässä kohtaa minun oli aika poistua kohti oopperaa, joten menetin ainakin ravintolan version portterisuklaakakusta.

Kirja


Kirja on Readmen kustantama, minulle se merkitsee sitä, että kirja on laadukkaasti sidottu ja että sitä on kaunis katsella. Tämä pitää tälläkin kertaa paikkansa, mutta kuvaajana ja graafisena suunnittelijana toiminut Sami Piskonen ja stailauksen tehnyt Janic Leino ovat onnistuneet tavallistakin paremmin. Kirja alkaa Ali Suvialan esittelyllä, joka on selvästi jonkun muun kirjoittama. Esittely hehkuttaa kirjan hollandaisekastikereseptiä, kastike vaikuttaa hyvältä ja se oli ensimmäinen kirjasta kokeilemani resepti sitä. Kastike on hyvä, jopa erinomainen, mutta hollandaise se ei ole. Hollandaiseen kuuluu kananmunan keltuainen eikä sitä reseptissä ole; Suviala kutsuu itsekin kastiketta vehnäolut-voikastikkeeksi, ei vehnäoluthollandaisekastikkeeksi. Reseptien shalottisipuli saa minut hieman nostamaan kulmakarvojani, erityisesti vehnäolut-voikastikkeessa -reseptin kirjoitusvirheen "halottisipuli" kera. Readme kustantaa hienoja kirjoja, mutta näihin asioihin kustantaja voisi kiinnittää hiukan enemmän huomiota.

Muokkaus: väite on virheellinen, kirjassa on hollandaisemuunnos sivulla 33. Pahoittelen virhettäni.

Kirja jatkaa muutaman sivun verran ruoan ja oluen yhdistämisestä. Tämä on hyvä asia, sillä aiheesta puhutaan edelleen turhan vähän. Olut ja ruoka on usein helpommin yhdistettävissä, kuin se perinteisempi vaihtoehto, viini. Reseptejä on paljon, ja monet niistä herättävän kokeilunhalun. Juuston ja oluen liittoa käsitellään useamman sivun verran; tätä suosittelen kokeilemaan ennakkoluulottomasti.

Kirjan loppuosassa pannaan olutta itse. Mika Laitisen lyhyt kirjoitus aiheesta on kiinnostava, mutta varsinaiseksi oppaaksi teksti suosittelee, esimerkiksi, Laitisen ja Maria Markuksen kirjaa Rakkaudella pantua. Oluesta kertovat ja reseptejään esittelevät Hüffnerin ja Laitisen lisäksi Mika Oksanen ja Maria Markus.

Kirjassa on sisällysluettelon lisäksi monesta keittokirjasta puuttuva hakemisto, joka on kirjan tyyliin sopivasti luokiteltu oluttyypeittäin. Yhden aukeaman olisi voinut käyttää ruoka-aineittain järjestettyyn hakemistoon, mutta alle 200-sivuisessa kirjassa tämä ei ole vakava puute.

Gastropub kotikeittiössä on tunnelmaltaan maanläheinen. Kirja on hieno eikä 27,90 euron hintakaan päätä huimaa. Paikan päältä Bryggeristä kirjan saa kuulema muutamaa euroa edullisemmin. Olen kokeillut kirjasta kahta reseptiä, joista vehnäolut-voikastike sai jaetun suosion, mutta portterisuklaakakkua ylistivät kaikki. Äijäruokaa suosittelee sekä kirjaa että ravintolaa. Mainitsemistani resepteistä kirjoitan myöhemmin erikseen.

Paahdettu feta - Baked feta

Baked Feta

Kävimme viime kesänä toisen kerran Masourissa, Kalymnoksen saarella Kreikassa. Vietimme miellyttävät kolme viikkoa hyvän ruoan ja viinin maustamassa kauniissa ilmastossa. Parhaan alkuruoan saimme ravintola Avrassa: paahdettua fetaa, tavallaan kuin kreikkalainen salaatti lämpimänä. Sitä oli luonnollisesti pakko kokeilla myös kotona.


Tarvitset


kahdelle

Lämmitä uuni 200 °C.

200 g fetaa
suippopaprikaa viipaleina
2 viipaletta tomaattia
punasipulia renkaina
mustia oliiveja
vastajauhettua mustapippuria
suolaa
oreganoa, mielellään kreikkalaista
2 rkl neitsytoliiviöljyä

Huuhtele feta nopeasti ja kuivaa se. Leikkaa paprikasta muutama viipale. Leikkaa tomaatin keskikohdalta kaksi viipaletta. Asettele paprikasuikaleet fetan päälle ja tomaatit puolestaan niiden päälle. Asettele sipulireinkata tomaattien päälle niin, että oliiveille jää koloja, joissa ne pysyvät paikalleen. Lisää muutama oliivi ja lisää sipulia. Rouhi päälle hieman suolaa ja mustapippuria. Lisää oregano ja valuta oliiviöljy annoksen päälle. Paahda uunissa noin 20 minuuttia.

Erittäin helppoa ja erittäin hyvää. Tätä tehdään toistekin, mutta hieman pidemmällä paahtoajalla ja oliiviöljy hiukan lisäten.

We revisited Masouri, on the Island of Kalymnos, Greese, last Summer. We spent three lovely weeks, spiced by good food and wine, on the Island. We found the best appetizer of the trip in restaurant Avra: baked feta, which was a bit like greek salad, but warm. We liked it so much that we wanted to try it at home.


Ingredients


for two persons

Warm the oven to 200 °C.

200 g feta cheese
a few slices of sweet pepper
2 slices of tomatoe
a few red onion rings
black olives
freshly ground black pepper
salt
oregano, preferably Greek one
2 tbs extra virgin olive oil

Rinse the feta cheese quickly and dry it. Cut a few slices of the sweet pepper and two slices of tomatoe. Lay the pepper on the feta and the tomato slices on the top of the pepper. Add onion rings so that it will be easy to put the olives on the "holes" of the onion rings. Add a few olives and the rest of the onion. Add ground black pepper and some salt. Add the oregano and the olive oil. Bake in the oven about 20 minutes.

This was very easy to prepare and it was very tasty. We will cook this again, but we will use some more olive oil and we will bake the cheese a longer time.
